Just beet it

Toasted Italian bread with truffle oil topped with fresh spinach, marinated beets, and crumbled goat cheese.

  1. Scrolling through what I've missed in the busy-ness of the season and all I can say is THANK YOU for an idea how to eat beets in a way that sounds yummy! I bought some out of curiosity, and then had no idea how to prepare them, lol.
